Who doesn't love chocolate chip cookies? Literally no one. Usually chocolate chip cookies are full of deliciously devilish butter and sugar and, while they might taste amazing, they'll make you feel gross after you eat them. These bad boys are still delicious, but they won't make you feel sluggish and blah for the rest of the day. Give 'em a try! You'll be eating tasty treats within about 25 minutes...how can you resist?
- 3 cups almond flour
- 1 tsp baking soda
- 1 tsp salt (plus a little extra for sprinkling)
- 2 eggs
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup coconut oil, melted
- 1 cup chocolate chips
- 1/2 cup walnuts (optional)
Preheat oven to 375F. In a medium sized bowl combine all dry ingredients (flour, baking soda, salt).
In a small mixing bowl, combine eggs, maple syrup and vanilla.
Pour wet ingredients into dry and mix thoroughly until combined (you can use a stand mixer or hand mixer if your arms aren't in need of a workout, but combining by hand works too).
Pour melted coconut oil into batter and mix until well combined.
Stir in chocolate chips and walnuts (if you don't want walnuts, use an extra 1/2 cup of chocolate chips).
Drop TBSP-sized balls of cookie dough onto a parchment-lined baking sheet (if you're a big salt fan like me, add a little sprinkle of sea salt to the top of each cookie) and bake for 15 minutes (or until edges turn brown).
