Hey friends, if you're reading this, I legit hope that your recent weeks have been nowhere near as rough as mine. And for that, I apologize, as it has resulted in fewer posts than usual. However, I think I can make it up to you with today's post.
Since I started avoiding gluten/dairy (literally 11 years ago now), I've always craved the deliciousness of a cinnamon roll. Now, the cinnamon rolls we all know and love are FILLED with sugar, flour and yeast. The recipe I'm about to share with you includes none of those ingredients butbut still provides the cinnamon roll flavor we all know and love.
- 3 cups almond flour
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup coconut oil (melted)
- 2 Tbsp honey
- 2 large eggs
- 1/4 cup (ish) honey - really enough to coat your dough
- 1/2 cup nuts, finely chopped (I prefer walnuts or pecans)
- 1/2 cup raisins (optional)
- 2 Tbsp cinnamon
Preheat oven to 350F
In a large bowl, combine almond flour, baking soda and salt.
In another bowl, beat together melted coconut oil, honey and eggs. (Do not use cold eggs or they will cause clumps to form in your coconut oil)
Add your liquid mixture to your almond flour mixture and stir until it forms a dough.
Scoop dough into a ball and let it rest in the refrigerator for 10 minutes so that it's easier to work with.
Once chilled, lightly grease the outside of the dough with coconut oil, place dough between two sheets of parchment paper and roll dough into a rectangle (approximately 1/4-1/8" thick)
Drizzle your rectangle of dough with the 1/4 cup (ish) of honey and brush to cover the whole surface.
Sprinkle your raisins, nuts and cinnamon over your dough
Turn dough so that the short end is facing you and roll away from you as tightly as possible until you have a log. (If your dough cracks, use your hands to manipulate the dough and fill the spaces).
Slice your log into approximately 1" wide slices (should make about 10 cinnamon rolls)
Grease your 9" round pan with coconut oil and position your rolls within the pan.
Bake your cinnamon rolls for 10-15 minutes
Remove from oven and cool about 10 minutes
- 1/2 cup coconut butter (melted)
- 2 Tbsp honey
- 1/2 tsp vanilla extract
Combine ingredients and spread over warm cinnamon rolls. That wasn't too difficult, was it? Enjoy these cinnamon rolls as a breakfast treat, a warm afternoon snack or a delicious dessert.
