Friday night + Olympics had me craving one thing: pizza. However, I'm trying to avoid some of the more inflammatory foods right now, so I didn't want to eat a bunch of gluten free flour and I never eat dairy, so normal cheese was off the table. So instead, I made a cauliflower crust pizza with vegan cheese, and I gotta say, it hit the spot! Now you're not going to get the same textural crunchy/chewy deliciousness that you would with a normal pizza crust, but you can easily still create some great flavor combos that are super satisfying. I made this up on the spot, but it turned out pretty bomb if you ask me, so I figured I had to share. This is a light, summery alternative to seafood spaghetti - still filling, but doesn't leave you stuffed if you eat it all (which you probably will because it's crazy delicious).
There are a couple of pieces to this dinner: baking spaghetti squash, making the pesto, grilling the shrimp and tomatoes and sautéing the asparagus. None of these pieces are particularly difficult, so give it a go if you're in need of a light summery dish!Read More
Okay, so first off, I must preface with the fact that I haven't eaten gluten in 11 years and dairy is pretty much in the same boat (every once in a while I have a break with dairy where I think mayyyyybe I can tolerate it...I'm always wrong). I have an autoimmune disorder that makes eating hard for me, so my overall goal at all times is to eat food that makes me not feel like I'm dying. Solid promotion of my cooking skills, right?
